Apple & Smoked Gouda Pastry Tarts

Ingredients

  • 1 sheet puff pastry dough, thawed

  • 1 egg, well whisked

  • 1 small apple, cored and thinly sliced

  • 1 small shallot, thinly sliced

  • 1 cup shredded smoked gouda cheese

  • Kosher salt and freshly ground black pepper

  • 2โ€“3 tablespoons SideDish Apple Cider Vinaigrette, plus more for drizzling

Method

  1. Preheat the oven to 400ยฐF and line two large sheet pans with parchment paper.

  2. On a lightly floured surface, roll out the sheet of puff pastry into a rectangle about โ…› inch thick. Cut each sheet into 8 even rectangles and transfer to the prepared sheet pans. Using a sharp knife, lightly score a ยฝ-inch border around each rectangle, being careful not to cut all the way through. Brush the edges with the beaten egg.

  3. In a medium bowl, toss the apple and shallot slices with the Apple Cider Vinaigrette, thyme, and a pinch of salt and pepper until just coated.

  4. Sprinkle the center of each pastry with a small handful of gouda cheese, then top with a few slices of the dressed apples and shallots. Finish with another small sprinkle of cheese and a few thyme leaves.

  5. Bake until the pastry is puffed and golden brown, about 20โ€“25 minutes, rotating the pans halfway through.

  6. Let cool slightly, then drizzle with a touch more SideDish Apple Cider Vinaigrette before serving.
