BBQ Chicken Lettuce Wraps

Ingredients

  • 1 Β½ lbs boneless, skinless chicken thighs
  • 1 cup SideDish Uncle Ronny’s BBQ Sauce, divided
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned; if frozen, thawed and reheated)
  • 1 cup guacamole (store-bought or homemade)
  • Β½ cup pickled red onions
  • 12 large butter lettuce leaves (from about 2 heads)

Method

  1. In a shallow dish or resealable bag, combine the chicken thighs with Β½ cup of the BBQ sauce. Toss to coat, then cover and marinate for at least 30 minutes or up to 8 hours in the refrigerator.

  2. Preheat the grill to medium-high heat. Remove the chicken from the marinade, letting excess drip off. Grill for 5–6 minutes per side, or until the internal temperature reaches 165Β°F. During the last 1–2 minutes of cooking, brush with the remaining Β½ cup BBQ sauce for a glossy, caramelized finish.

  3. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.

  4. Lay out the butter lettuce leaves on a serving platter. Divide the sliced chicken evenly among the leaves. Top each with corn, black beans, a spoonful of guacamole, and pickled red onions.

  5. Enjoy immediately while the chicken is warm. Enjoy!
