Creamy Sesame Chicken Lettuce Cups

Ingredients
- 1 cup halved and thinly sliced mini cucumber
- 1 tablespoon avocado oil
- 1 tablespoon rice vinegar
- ¼ teaspoon kosher salt
- ½ teaspoon crushed red pepper flakes
- 2 tablespoons avocado oil
- 1 pound chicken tenders, cut into 1-inch pieces
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 3 tablespoons SideDish Creamy Sesame, plus more for serving
- 16 bibb lettuce leaves
- 1 cup cooked brown rice
- Fresh cilantro
- 1 tablespoon toasted sesame seeds
- 1 lime, cut into wedges

Method
Marinate the Cucumbers:
In a medium bowl, combine the cucumbers, avocado oil, rice vinegar, salt, and red pepper flakes. Toss until well combined. Set aside to slightly marinate.
Cook the Chicken:
In a large skillet, heat the oil over medium high heat. Add the chicken in a single layer and season with salt and pepper. Cook until golden brown and cooked through, about 3 minutes per side.
Reduce the heat to medium-low and drizzle with 3 tablespoons of the SideDish Creamy Sesame. Cook, tossing, until the chicken is well coated.
- To serve, stack 2 lettuce leaves together (this will make your wrap sturdier) then fill lettuce wraps with 1 to 2 tablespoons of the prepared rice at the bottom. Add 2 to 3 tablespoons of the sesame chicken over the rice then top with the cucumbers, cilantro, and sprinkle of toasted sesame seeds. Drizzle with additional SideDish Creamy Sesame and serve with lime wedges.
