Creamy Sesame Chicken Salad

Ingredients

4 cups shredded cooked chicken (rotisserie chicken works great)

1 cup thinly shredded red cabbage

4 green onions, thinly sliced

¾ cup mini cucumbers, quartered lengthwise and thinly sliced

1 cup matchstick carrots

½ cup SideDish Creamy Sesame dressing (plus more to taste)

1 tablespoon freshly squeezed lime juice
-
2 tablespoons toasted sesame seeds

Kosher salt and freshly ground black pepper, to taste
Method
In a large bowl, combine the shredded chicken, red cabbage, green onions, cucumbers, and carrots.
Add the Creamy Sesame dressing and lime juice. Toss everything together until well coated.
Sprinkle in the toasted sesame seeds and season with salt and pepper to taste.

Serving suggestions:
Spoon it into lettuce cups or butter lettuce leaves for a fresh, crunchy wrap. Serve it over steamed rice or your favorite grain for a heartier meal. Toss it with chilled rice noodles for a fun sesame noodle salad twist.
