Crunchy Taco Cups with Chipotle Ranch

Ingredients

  • 1 tablespoon avocado oil

  • 1 lb ground beef

  • 1 (10-ounce) can Rotel (diced tomatoes with green chilis)

  • 1 (1.3-ounce) package taco seasoning

  • 24 square wonton wrappers

  • 1 ยฝ cups shredded Mexican cheese blend

  • Avocado oil spray

  • SideDish Chipotle Ranch, for serving

  • Freshly chopped cilantro, for garnish

Method

  1. Preheat the oven to 375ยฐF. Lightly spray a 12-cup standard muffin tin with avocado oil spray.

  2. Heat the avocado oil in a large skillet over medium-high heat. Add the ground beef and cook until browned and cooked through, 6 to 8 minutes. Drain any excess fat. Stir in the Rotel and taco seasoning, then remove from the heat.

  3. To assemble, press 1 wonton wrapper into each prepared muffin cup. Sprinkle the bottom of each with about 1 tablespoon of cheese. Layer another wonton wrapper on top, then spoon in 1 to 2 tablespoons of the beef mixture. Finish with a little more cheese over the top.

  4. Bake until the wontons are golden and crispy around the edges and the cheese is melted, 12 to 15 minutes.

  5. Let cool slightly, then remove from the muffin tin. Arrange on a platter, drizzle with SideDish Chipotle Ranch, and sprinkle with fresh cilantro. Serve warm and enjoy!
