Green Chile Cheeseburger Meatballs with Chipotle Ranch

Ingredients

  • 1 pound lean ground beef  

  • 1 egg, lightly whiskedย 
  • 2 garlic clovesย 
  • ยฝ cup gluten free panko breadcrumbs (I like Aleiaโ€™s brand) 

  • 2 tablespoons SideDish Chipotle Ranch (plus more for serving)
  • ยฝ cup of shredded sharp cheddarย 
  • One 4-oz can of mild green chiles, undrainedย 
  • ยฝ teaspoon cuminย 
  • ยฝ teaspoon smoked paprika
  • ยผ teaspoon cayenne pepperย 
  • 1 teaspoon kosher saltย 
  • ยผ teaspoon freshly ground black pepperย 
  • Olive or avocado oil, for brushingย 
  • Slider style buns (optional)

Method

  1. Line a large sheet pan with parchment paper and set aside. Preheat the oven to 400โ„‰.

  2. In a large bowl, combine the ground beef, egg, garlic, panko, SideDish Chipotle Ranch, shredded cheddar, green chiles, cumin, smoked paprika, cayenne, salt, and black pepper. Using clean hands, mix until just combined. Form the mixture into 1ยฝ -inch balls and place them on the prepared sheet pan. Brush each meatball lightly with oil. Bake for 16-18 minutes until browned and cooked through.

  3. Serve the meatballs as an appetizer with SideDish Chipotle Ranch for dipping. Alternatively, you can  serve in slider buns with an extra drizzle of SideDish Chipotle Ranch as sliders!
