Green Chile Cheeseburger Meatballs with Chipotle Ranch

Ingredients

1 pound lean ground beef
- 1 egg, lightly whiskedÂ
- 2 garlic clovesÂ

½ cup gluten free panko breadcrumbs (I like Aleia’s brand)
- 2 tablespoons SideDish Chipotle Ranch (plus more for serving)
- ½ cup of shredded sharp cheddarÂ
- One 4-oz can of mild green chiles, undrainedÂ
- ½ teaspoon cuminÂ
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepperÂ
- 1 teaspoon kosher saltÂ
- ¼ teaspoon freshly ground black pepperÂ
- Olive or avocado oil, for brushingÂ
- Slider style buns (optional)
Method
Line a large sheet pan with parchment paper and set aside. Preheat the oven to 400℉.
In a large bowl, combine the ground beef, egg, garlic, panko, SideDish Chipotle Ranch, shredded cheddar, green chiles, cumin, smoked paprika, cayenne, salt, and black pepper. Using clean hands, mix until just combined. Form the mixture into 1½ -inch balls and place them on the prepared sheet pan. Brush each meatball lightly with oil. Bake for 16-18 minutes until browned and cooked through.
Serve the meatballs as an appetizer with SideDish Chipotle Ranch for dipping. Alternatively, you can serve in slider buns with an extra drizzle of SideDish Chipotle Ranch as sliders!
