Kale Salad with Mint and Creamy Sesame Dressing

Ingredients
- 1 bunch green kale, de-ribbed and thinly sliced

2 green onions, thinly sliced
- ¼ cup freshly chopped mint leaves
- ½ cup roughly chopped unsalted and roasted cashews
- 1 rotisserie chicken (or cooked chicken), skin removed and meat shredded into bite-sized pieces

1 tablespoon toasted sesame seeds

SideDish Creamy Sesame Dressing, to taste
Method
In a large bowl, combine the kale, green onions, mint, cashews, chicken, and sesame seeds. Pour desired amount of the SideDish Creamy Sesame Dressing over the kale and toss until very well coated and the kale is slightly wilted ( I like to toss for 2-3 minutes).
