Miso Caesar Chicken Pasta Salad

Ingredients

    • 1 lb boneless, skinless chicken breasts

    • 1 tsp Kosher salt

    • ยฝ tsp pepper

    • 2 tbsp avocado oil

    • 9 ounces bowtie pasta

    • 4 cups roughly chopped romaine lettuce (or 1 head)

    • 1 cup croutons

    • 1 cup grated parmesan cheese

    • Lots of freshly ground black pepper, to taste

    • 1 bottle SideDish Miso Caesar

    Method

    1. Heat a large pot of water to a boil. Meanwhile, cook the chicken:

      Season both sides of the chicken with salt and pepper. Heat the oil in a skillet over medium high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 4 minutes per side. Transfer to a cutting board and set aside. When cool enough to handle, dice into ยฝ-inch cubes.

    2. Make the pasta salad:

      When the water reaches a boil, add the pasta and cook until tender, according to package directions. Drain and let cool slightly.

    3. In a large bowl, combine the cooked pasta, the diced chicken, lettuce, croutons, cheese, and LOTS of pepper (or to taste). Drizzle the bottle of SideDish Miso Caesar over the top and toss until very well coated, then serve and enjoy! (Store leftovers in an airtight container; it keeps well for 2 to 3 days).
