Sheet Pan Honey Dijon Sausage with Squash and Roasted Grapes

Ingredients

1 large delicata squash cut in half lengthwise, seeds removed and cut into ¼-inch slices
- 2 shallots, trimmed on both ends, peeled and cut into ½-inch thick wedges
- 2 cups red grapes, trimmed into smaller grape bundlesÂ
- 3 tablespoons extra virgin olive oil, divided
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves
- 4 sweet, mild, or hot Italian sausage links

Method
Preheat the oven to 400℉ and line a large baking sheet with parchment paper.
- Place the delicata squash, shallot, and grapes on the prepared baking sheet. Drizzle with 2 tablespoons of the olive oil and sprinkle with salt, pepper, and thyme.
- Nestle the sausage links in the center of the sheet pan and pierce each link a few times with a fork. Drizzle the links with the remaining extra virgin olive oil.
Transfer to the oven and bake for 20 minutes. Remove from the oven and flip the sausages. Drizzle the SideDish Honey Dijon over the entire sheet pan and transfer back into the oven. Bake until the sausages are cooked through and the delicata squash is tender, about 10 more minutes.
