Smashed Dumpling Tacos

Ingredients

    • 1 pound lean ground pork

    • ยฝ cup minced green onion

    • 2 garlic cloves

    • 1 teaspoon minced ginger

    • 1 teaspoon toasted sesame oil

    • 2 teaspoons chili crisp

    • 1 tablespoon tamari (or soy sauce)

    • ยฝ teaspoon kosher salt

    • Thinly sliced green onions

    • Finely chopped fresh cilantro

    • Lime wedges, for serving

    Method

      1. In a medium bowl, toss the slaw mix with the SideDish Creamy Sesame Dressing until evenly coated. Set aside.

      1. In a large bowl, combine the ground pork, green onions, garlic, ginger, sesame oil, chili crisp, tamari, and salt. Mix until well combined. Divide the mixture into 6 equal portions and roll each into a ball.

      1. Heat a griddle or large skillet over medium-high heat.

      2. Place a tortilla flat on the griddle and add one pork ball to the center. Using a grill press (or a sturdy spatula), firmly press the pork onto the tortilla so it spreads into a thin, even layer and adheres to the tortilla.

      3. Cook for 3โ€“4 minutes, or until the pork is deeply browned, the edges are crispy, and the tortilla is golden. Flip and cook for an additional 2โ€“3 minutes, until the pork is fully cooked through.

      4. Repeat with the remaining tortillas and pork mixture.

      1. Top each taco with the Creamy Sesame slaw. Garnish with toasted sesame seeds, sliced green onions, fresh cilantro, and a squeeze of lime.
