Smoked BBQ Spatchcock Chicken

Ingredients

  • 1 whole chicken (4-5 lb)

  • 2 tablespoons avocado oil

  • 1 tablespoon kosher salt

  • 1 tablespoon coconut sugar (sub brown sugar)

  • 1 tablespoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon ground black pepper

  • 1 teaspoon dried thyme

  • ยฝ teaspoon cayenne

  • ยฝ cup SideDish Ronnys BBQ Sauce

Method

  1. When ready to cook, set the grill or smoker temperature to 400ยฐF and preheat with the lid closed for 15 minutes.

  2. Using a large knife or shears, cut the chicken open along the backbone on both sides, through the ribs, and remove the backbone. Once the bird is open, flip over and press down on the breastbone until you hear a crack to spread the bird flat; this will allow it to roast evenly.

  3. Brush the chicken all over with avocado oil so itโ€™s well coated.

  4. In a small bowl, combine the salt, coconut sugar, paprika, garlic powder, onion powder, black pepper, thyme, and cayenne. Season both sides of the chicken with the rub.

  5. Place the chicken directly on the grill grates, breast-side up. Close the lid and cook until the internal temperature reaches 160ยฐF, 35-40 minutes, by inserting the probe into the thickest part of the chicken breast. When the chicken is almost done cooking, brush with SideDish Uncle Ronnyโ€™s BBQ Sauce and cook for 4 minutes more, until the glaze is set.

  6. Remove from the grill and let rest for 10 minutes (the internal temperature will rise to 165ยฐF) before carving. Serve with more SideDish Uncle Ronnyโ€™s BBQ sauce and enjoy!
