Spicy Chicken Taco Caesar Salad

Ingredients
- 1 small jalapeño, slicedÂ
- Juice of 1 limeÂ
- 2 tablespoons avocado oilÂ
- 1 ½ pounds chicken tenderloins, cut into ½-inch cubesÂ
- One [1.31 oz] packet mild taco seasoning (I use Siete Foods)Â
- 6 cups spring lettuce mixÂ
- ½ cup halved grape tomatoes Â
- 1 ½ cups tortilla chips, lightly crushedÂ
- 1 small avocado, slicedÂ
- ¼ cup SideDish Miso Caesar Â
Method
- Place sliced jalapeño in a bowl with juice of 1 lime and a pinch of salt. Stir and set aside to slightly pickle.
Heat the oil in a large skillet over medium heat. Add the chicken in a single layer then sprinkle with the taco seasoning and cook, tossing, until the chicken is browned and cooked through all over, about 6 minutes. Remove from the heat and set aside.
When the chicken is done cooking assemble the salads. Divide the lettuce, sliced tomatos, tortilla chips, and avocado among bowls. Divide the chicken on top of each bowl. Using a fork, remove the jalapeños from the liquid and place on top of the salads. Drizzle with the SideDish Miso Caesar.
