Fall Veggie Glow Bowl

Ingredients

  • 1 small delicata squash, halved, seeded, and cut into Β½-inch half-moons
  • 1 small head cauliflower, cut into florets
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 3 tablespoons avocado oil
  • 1 teaspoon kosher salt
  • Β½ teaspoon black pepper
  • Β½ teaspoon smoked paprika
  • 1/3 cup SideDish Apple Cider Vinaigrette, plus more for serving
  • 1 cup uncooked farro, rinsed
  • 2 cups vegetable or chicken broth (for cooking farro)
  • 2 cups shredded kale, baby arugula, or baby spinach (greens of choice)
  • Β½ cup crumbled goat cheese (optional, for serving)
  • ΒΌ cup toasted pumpkin seeds (optional, for crunch)

Method

  1. Cook the farro: in a medium saucepan, combine the farro and broth. Bring to a boil, then reduce to a simmer and cook until tender, 25 to 30 minutes. Drain any excess liquid.

  2. Roast the veggies: while the farro is cooking, preheat oven to 425Β°F. On a large sheet pan, toss the delicata squash, cauliflower, and chickpeas with avocado oil, salt, pepper, and smoked paprika. Spread into a single layer and drizzle with SideDish Apple Cider Vinaigrette. Roast, stirring halfway through, until golden and crisp on the edges, 25 minutes.

  3. Assemble the bowls: divide farro among bowls. Top with a handful of greens, followed by the roasted veggie mixture. Sprinkle with pumpkin seeds, if using. Drizzle with more vinaigrette to taste and serve warm.
